Philosophy
In 1995 Thomas Kersten made a remarkable discovery while he was searching through the old property records: Stockinggut has the largest private distilling licence – granted by Empress Maria Theresa back in the 1700s!
This gave the manager of the hotel the idea of starting to distil schnapps. The first fruit schnapps varieties were made using a Binderberger still and purely through self-study – without any professional help or guidance.
The success was not bad for the beginning. Through a constant process of trial and error and the development of a basic fermentation process with state-of-the-art know-how we then decided to invest in a Holstein still to set up our second line of business, "Stocki's Schnapps Distillery".
As an individualist with innovative ideas and commitment, Thomas Kersten created the first product line, with a view to making varieties that had been neglected in the past popular again. In 2001 the name "Austria's First Schnapps Distillery Hotel®" was registered at the Austrian Patent Office. Things progressed rapidly, and it was not long before the second product line was in place. Very unconventional Cuvées such as raspberry/pear and pumpkin/pear, plus the Cuvées Suprême, a mixture of grappa and pear, were the result. We have been offering fine schnapps from oak casks – similar to those used in the production of cognac and whisky – to customers from all corners of the globe for 5 years. The premium quality has also been acknowledged in international competitions, of course, with numerous awards and medals. In the meantime our visions have developed to such an extent that we have set up our very own Stocki's Product Workshop and added other products to our range of fine schnapps and liqueurs. Our new creations include (among others) Stocki's schnapps cheese, jams and organic vinegar. Thomas Kersten's product designs have also already resulted in two protected brands:
Tom Cherry, the first Mon Chéri chocolate in liquid form and what is probably the first banana schnapps in the world to be aged in whisky barrels.
